Michelin-starred chef Raymond Blanc has signed a deal to open a Brasserie Blanc restaurant at the Bristol Alliance’s £500m town-centre redevelopment.
The chef is taking 4,000 sq ft in the former Quaker Meeting House, within the city’s Quakers Friars area.
The two former friary wings, Bakers Hall and Cutlers Hall, which total 6,000 sq ft, will also be renovated and used as function rooms by the restaurant.
Following Blanc’s signing, the Alliance a joint venture between Hammerson and Land Securities has submitted an application for change of use of the friary buildings.
The scheme, which is now more than 55% let, is scheduled to open in 2008. Donaldsons and Lunson Mitchenall are joint agents.
