Miss Macaroon, a patisserie specialising in macarons, is looking to open 100 shops and concessions in the UK over the next five years.
The patisserie, founded by managing director Rosie Ginday in 2011, has appointed Midlands-based Boston Fieldgate to identify 103 sites by 2021.
It is looking to capitalise on the rise of gluten-free eaters in the UK – some 25% of the population now buys gluten-free products.
Miss Macaroon, which includes designer Karl Lagerfeld among its customers, currently operates out of pop-up space in Birmingham.
Ginday agreed a deal last year with John Lewis to sell her products at its new Birmingham flagship at Grand Central.
She said she was now seeking sites across the UK in towns and cities including London, Newcastle, Birmingham, Manchester and Bristol and was targeting shopping and leisure schemes, transport hubs and high-footfall locations.
The brand is looking for shops of 150 sq ft to 500 sq ft, paying up to £50,000 pa in rent.
The business, which has been trading for five years, wants to have three shops by the end of 2017, generating £630,000 a year, followed by 12 shops generating £2.5m pa in 2018 and 21 shops making £4.2m pa by 2019.
Ginday, a Michelin-trained pastry chef and Goldman Sachs business graduate, is back by the Black Country Reinvestment Society and Big Venture Challenge.
