Former Lunson Mitchenall director Nigel Thompson is expanding his sushi chain Bambushi.

Thompson has opened a second restaurant, a 75 sq ft kiosk, at Standard Life’s Churchill Square in Brighton on a three-year lease.

He has also opened another 75 sq ft kiosk at Brighton train station. He has agreed a one-year lease with the landlord, Southern Trains.

Thompson opened his first restaurant at Capital Shopping Centres’ 530,000 sq ft Chapelfield mall in Norwich last year. He is continuing to eye up both train station and shopping centre sites across the South East for the next few openings.

Lunson Mitchenall advised Standard Life; Travel Point Trading advised Southern Trains.
