Rockpool Investments will today launch a £1.7m fundraising to revive the Chicago Rib Shack restaurant and develop a chain.
It will be reborn as a “fast dining” format. The first opened in September last year at Westfield Stratford City, in east London. The original concept was established 30 years ago in Knightsbridge, central London.
